Cauliflower Cheddar Casserole

Every week this spring and through the summer we are enjoying a fresh supply of veggies and fruit from Farmer John at the Vollmer Farm C.S.A









C.S.A. stands for Community Supported Agriculture.  We sign up for shares in the harvest and eating local really is a wonderful thing.

This week we had two types of cauliflower amid our bounty.  Here is a yummy and easy cauliflower recipe that is sure to be a crowd- pleaser.

The kids love it because it is cheesy and the adults love it because it is a healthy take on a comfort food dish.  Enjoy!

 

Ingredients

  • 1  cauliflower, cut into flowerets
  • 3  tablespoons olive oil
  • 3  tablespoons  all-purpose flour
  • 1 1/2  cups  milk
  • 2/3  cup  shredded Cheddar cheese
  • 1  teaspoon  salt
  • 1 teaspoon cumin
  • 1/4  teaspoon  pepper
  • 1 cup bread crumbs

Preparation

Arrange cauliflower in a steamer basket over boiling water. Cover and steam 10 minutes or until crisp-tender. Place in a lightly greased 2-quart baking dish.
Put 3 tablespoons of olive oil in a heavy sauce-pan over low heat; whisk in flour, whisking until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in milk; cook over medium heat, whisking constantly, until thickened and bubbly. Add cheese and next ingredients, stirring until cheese melts. Stir in 1 1/2 cups bread crumbs. Pour mixture over cauliflower.  Sprinkle with remaining bread crumbs.
Bake at 350° for 25 minutes or until bubbly and brown.
