Sweet Potato Apple Bake

We are always looking for ways to eat healthy and this side dish is a crowd pleaser for our boys.  It is very easy to make and so yummy.

The ingredients are simple, but combining the tart sweetness of apples with sweet potatoes makes for a tasty healthy fall or winter dish. Oatmeal topping finishes this dish off perfectly.

Here's how to make the Sweet Potato Apple Bake...
3 medium sweet potatoes
4 apples (a variety that bakes well, we used Gala)
Juice from one orange
2 cups oats
1 tbsp butter
4 tbsp olive oil
4 tbsp honey (or brown sugar)

Preheat oven to 350 degrees.

Peel and slice the sweet potatoes about one-half to three-quarters inches thick. Core, peel and slice the apples about one-quarter inches thick.

Melt butter with olive oil and then mix in honey. Add oats and stir to coat all the oats with the honey mixture.

Coat a baking dish with oil.

Place all the sweet potatoes in one layer in the baking dish.

Next squeeze the juice of one orange on top of the potato slices. Then place all the apples in one layer on top of the potatoes.

For the final step spread the oat topping mixture over the apples.

It's ready for the oven.  Bake for one hour.  Check to make sure the bake is done by sticking a fork to the bottom of the dish.  If it's soft, it's ready to eat! If still firm it may need 10 more minutes.  Enjoy!
